Our take on the classic lemon ginger tea: lemongrass and orange peels form the citrus base with layers of not just ginger but cinnamon and cloves too for that gentle warming spice. Finally an infusion of herbs to add complexity and aroma to this drink, with rosemary, lemon myrtle and blackberry leaves.
The result is a warm, aromatic, smooth and satisfyingly full-bodied drink with a slight sweetness and lingering aftertaste. Because this is a herbal infusion, overbrewing this tea will not bring out astringency or puckery taste; instead, you will get an intensifying of flavours and can experiment to your taste.
1 slightly heaped teaspoon per 250mL water
Freshly boiled water at 100˚c
Infuse for at least 5 minutes
Enjoy clear or with honey
